Description
The chicken back is literally the back of the chicken, consisting of the backbone along with some additional meat and skin. It’s located behind the neck and wings and in front of the tail1. The meat on chicken backs is mostly white meat, which remains after the white chicken breast is cut away. Although chicken backs have a high bone-to-meat ratio, they can be used effectively in recipes that take advantage of both the meat and bone.
